1 cup white fool (split in half)
2 cups chickpeas
1 big onion
1 head garlic
3 ts salt
2 TBS falafel spice
2 ts carbonate (sodium carbonate)
Soak fool and chickpeas overnight with water.
Drain and keep in strainer for 1 hour before mincing.
Mince the onion and garlic in blender/slicer and rap in a towl and squeeze out water and keep aside in towel.
Mince fool and chickpeas in blender/slicer, remove to a bowl.
Add the onion/garlic, salt, flafel spice and mix well, let rest for 1 hour before frying.
Last 10 min before frying add the carbonate, mix well.
Heat sunflower oil to 170c, shape the falafel in it's special too and gently drop into oil.
When golden, remove to strainer.
