Latest Recipes500g shrimp, peeled and deveined
100g red onion, thinly sliced
3 garlic cloves, thinly sliced
2 bay leaves
10g mustard seeds
10g peppercorns
5g red pepper flakes
200ml white vinegar
100ml lemon juice
50ml olive oil
50g fresh dill, chopped
Salt and pepper to taste
Prepare the shrimp:
Bring a pot of salted water to a boil.
Add shrimp and cook for 2-3 minutes until pink and opaque.
Drain and transfer to an ice bath to cool, then drain again.
Make the pickling brine:
In a jar or bowl, layer cooked shrimp, red onion, garlic, bay leaves, mustard seeds, peppercorns, and red pepper flakes.
In a saucepan, combine vinegar, lemon juice, olive oil, salt, and pepper. Bring to a simmer, then let cool.
Pickle the shrimp:
Pour the cooled brine over the shrimp and add fresh dill.
Seal and refrigerate for at least 24 hours before serving.
