Latest Recipes1/4 cup chilli flakes
2 tbsp freshly crushed garlic (better reduce to 1)
2 tbsp freshly crushed ginger (better reduce to 1)
2 tbsp chopped green onions (green part)
1/8 cup sesame seeds
1 tsp salt
1 tsp sugar
1 tsp Kashmiri Red Chilli Powder
To heat in pot:
3/4 cup neutral oil
Few coriander seeds
2 whole cardamoms cracked
1/2 ts peppercorns
1 star anise
1 bay leaf
Handful green onion bulbs (white part)
• Heat the oil in a pot with the whole spices, bay leaf and green onion bulbs
• Let it infuse for 5 to 10 min on medium heat, do not let the onion burn.
• Mix all the remaining ingredients in a jar
• Strain over the hot oil and let it sizzle
• Mix well and seal the lid. Let it cool completely
• Store at room temperature

To make Chilli Oil Noodles:
1/4 cup Garlic chilli oil (oil only for frying prawns)
7 - 8 large prawns
1/3 Garlic chilli oil mix (to mix with soy)
2 tbsp soy sauce
2 tbsp hot water (if needed)
1.5 cups boiled noodles
• Cook the prawns in chilli oil for only 2 minutes (on medium flame) and remove
• Add in more chilli oil, soy sauce and water (be careful not to burn the oil)
• Toss in your boiled noodles and mix well till saucy. Add more chilli oil if required
• Serve with the fried prawns. garnish with sesame seeds, green onions & coriander
