for 5 persons:

Nick's Recipe (recommended):
1 cup dried chickpeas (soak in water overnight)
3/4 cup Tahini "Al-yaman" brand
1/2 cup water from the boiling water of the chickpeas
1.5 teaspoons salt
1/2 cup lemon juice
2 minced garlic cloves

Mark's Recipe:
1 cup dried chickpeas (soak in water overnight)
64 grams Tahini "Al-yaman" brand
1.3/4 teaspoon salt
54 grams lemon juice
3 minced garlic cloves

Cooking Instructions:

Soak the chickpeas in water overnight. Cook the chickpeas in pressure cooker for 2 hours or until soft, drain from water but preserve 1/2 cup of the boiling water to add to the recipe, remove the skins from the chickpeas for a creamier texture. (they will separate easily when still hot)
Add all the ingredients into the electrical blender and process until creamy soft.

Garnich with olive oil, boiled chickpeas, red chili powder or parsley.
