Nick's Chocolate Chip Muffins: Submitted by: Nicolas Zouein | Date Added: 18 Jun 2015 Ingredients:

"Moist and tender, full of flavor. I came up with this recipe after many testings and tweaking of many recipes to get this perfect one."

Servings: 12

Ingredients:
1-1/4 cups all-purpose flour
1/4 cup brown sugar
1/2 cup white sugar
1/4 cup cocoa
3 TBS cadbury Highlights (milk chocolate instant drink powder) "Disregard this if not available"
3/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 big egg or 2 small ones
1/2 cup sour cream or yogurt
1/4 cup water
1/4 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
3/4 cup chocolate chips

Cooking Instructions:

1. In a large bowl, combine the flour, baking powder, cocoa, baking soda, choco chips and salt.
2. In another bowl, beat the sour cream, water, milk, oil, sugars and vanilla till sugars dissolve then add the eggs and beat slightly, don't over do it because the eggs will trap air bubbles.
3. Stir liquid into dry ingredients just until moistened, DO NOT MIX WITH A BLENDER, the secret to best muffins is to never mix too much, lumpy batter makes the best muffins.
4. Fill greased or paper-lined muffin cups two-thirds full.
5. Bake at 325 degrees F for 20-25 minutes or until a toothpick comes out clean.
6. Cool for 5 minutes before removing from pans to wire racks.

Footnotes
The cadbury instant powder drink gives a nice kick for the muffins, just disregard it if not available.
