There are a lot of Shawarma recipes out there specialy the greek and the turkish versions, they call it "doner", it comes with some kind of a bulky bread called "pita" it comes with yogurt inside of it instead of garlic spread, it is really disgusting because chicken and yogurt do not go together. The Lebanese version as described here is by far the tastiest in the world. I assure you that this is the original shawarma recipe that is being sold all over many famous restaurants and I'd like to say that it is a very well kept secret.

Servings: 10 sandwiches

Marinade:
2 Kilo of thinly cut skinless boneless chicken breast & legs
1/2 cup of "Junal" lemon juice (do not use fresh lemon juice) (http://www.junal.com/single-product.php?id=6)
1/2 cup cooking oil
1.5 cup white vinegar
10 garlic cloves smashed
2 teaspoons fenugreek powder (halbeh)
2.50 teaspoons white pepper
2 teaspoons salt
6 bay leaves

---To make sandwiches you'll need---:
10 Lebanese shawarma bread loaves "those are of a special size"
1 lettuce 1 cm sliced
5 cucmber pickles thinly sliced (kabis)
Lebanese garlic (Toom)
French fries

Cooking Instructions:

1. Rinse the boneless chicken with fresh cold water then cut horizontally into thinner cuts of about 1/2 cm.
2. Mix all the marinade ingredients in a blender, add to a bowl and mix well with the chicken, cover and let marinate in the fridge overnight.
3. Put like 4 tablespoons of cooking oil in a wide pan and heat well, the fire should be on high, remove 1/2 the chicken from the marinade and grill them on the pan, when light golden remove them and add the other half of the chicken (make the quantity in 2 batches).

--To make a sandwich--:
Open a loaf of bread, spread "Lebanese Garlic paste" on it (like 1 teaspoon), add shredded lettuce, add chicken, add a couple of pickle slices and a couple of French fries, roll and enjoy.
