Francois Spaghetti Sauce: Submitted by: Nick Zouein | Date Added: 2 Jun 2022 Ingredients:

5 kilo chopped tomato (Ammani or San Marzano )
2 stalk celery chopped
4 medium carrots chopped
2 medium onions chopped
8 garlic cloves
1/2 parsley bouquet chopped
1 cup white wine
2 ts salt
1/2 ts white pepper
3 TBS Butter
2 TBS flour
2 TBS sugar (add at the end)

Cooking Instructions:

1. Put all ingredients into appropriate pot except sugar, get to a boil then simmer covered on low heat for at least 45 min, stir from time to time so it doesn't stick to the bottom.

2. Transfer to a hand mill and pass them through getting rid of all the solids.

3. Return sauce to pan on medium-low heat uncovered and reduce 30% off it's water by simmering gently.

4. Add the sugar and calibrate salt, stir and transfer to jars immediately.
