Chicken Ingredients

2 kg Chicken
6 tbsp White Vinegar
1/2 tsp Tandoori Color
4 tbsp Yogurt
2 tsp Red Chilli Powder
1.5 tsp Black Pepper Powder
Salt – to taste
2 tsp Garam Masala Powder
2 tbsp Ginger-Garlic Paste
6 tbsp Tikka Masala or 4 tsp Tandouri spice

Spices for boiled rice:

1/2 kg Rice or 4 cups + 5 cups water
1 chicken bouillion cube
5 Clove
1 Bay leaf
1/2 tsp Black Pepper powder
1 tsp White Cumin Seeds
2 Green Cardamom pods crushed open
1 Cinnamon Stick (10 cm)
Salt to taste
Pinch of Safron soaked in finjen hot water

Gravy Ingredients:

2 large Onion
1 tsp Turmeric Powder
3/4 cup Oil
2 tsp Red Chilli Powder
3 tsp Coriander Powder
2 tbsp Garam Masala Powder
2 tsp Ginger-Garlic Paste
Salt – to taste
4 Tomatoes (or 2 tines crushed roma tomatoes, drain 1/2 their water before adding)
3/4 cup Yogurt
Mint, Fresh Coriander, Green Chillies and Orange Colour – as required

Cooking Instructions:

Directions for Chicken:

Marinate the chicken with all the given ingredients, and leave for 4-6 hours. Then put 2 tbsp of oil in a pan and cook chicken until done, then put a burning charcoal on the chicken and pour some oil over the charcoal and cover it until the smoke stops.
You can BBQ it or bake it in the oven.

Directions for cooking rice:
Wash rice several times till starchy milky water disappear.
Put all these spices with 2 tbsp oil in a cooking pot till splutter, add the rice and cook in fragrant oil about 3 min then add the water and chicken cube, add salt bring the water to a boil then put on very low fire about 8 min, open the lid and splatter the safron over the rice, cover and continue cooking another 8 min.

Directions

Pour oil in a pan and fry sliced onion until golden brown, then add ginger-garlic paste and add all the spices fry 3 min then add chopped tomato, cook covered on low till the tomato is done, around 30 min.
Add the chicken and mix well AND CONTINUE COOKING FOR ANOTHER 10 MIN.

When done mix gently with the rice and garnish with mint, fresh coriander, and green chillies".
